- 1 12 cups cornmeal
- 12 cup all-purpose flour
- 14 cup vegetable oil
- 1 13 cups buttermilk
- 13 cup sugar
- 2 eggs, beaten
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions

1Mix cornmeal, flour, sugar, baking soda and salt.

2Add eggs, vegetable oil and buttermilk.

3Stir briefly, just until mixed lightly.

4Pour 1/4 cup of batter onto a oiled skillet.

5Fry over medium-high heat for one to two minutes, or until golden brown on each side.

6Repeat oiling of skillet in between batches of hoecakes to keep them from sticking.

7Serve right away.
