- 2 c. white or yellow corn meal
- 1/2 tsp. salt
- 1 c. hot water
- 2 Tbsp. melted shortening or bacon drippings
- 1 to 1 1/2 c. cold water
Directions

1In a bowl, combine the corn meal, salt, hot water and shortening.

2Add enough cold water to make the batter pour easily. Grease a griddle or heavy skillet and set it over moderate heat. Pour about 2 teaspoons of batter on griddle or in skillet for each hoecake.

3After 3 to 5 minutes, or when the top begins to bubble, flip the hoecake with a spatula.

4Cook until the bottom turns a light brown.

5Eat immediately.
