Hog'S Head Cheese

Ingredients
- 5 gal. well water
- 1 clove garlic
- 1 whole hog's head, cleaned
- 5 large onions
- 2 red peppers, finely cut
- parsley and shallots
- 1 Tbsp. black pepper
- salt to taste
Directions

1In a large kettle, bring water to boil.

2Add hog's head and boil for 3 hours.

3Test with a fork to see if it can pull apart easily.

4If not, continue to boil until tender.

5Remove the heat from liquid.

6Place on a large platter and remove the bones and skin.

7Shred the meat, making sure all the bones have been removed.

8Return shredded meat to kettle.

9Chop onions, parsley, shallots and garlic finely.

11kettle and boil 10 minutes. Add red pepper, black pepper and salt.

12Boil 1 hour.

13Pour into small glass bowls to serve.
