- 2 Tbsp. olive oil
- 2 Cornish game hens
- 1 1/2 c. diced onions
- 2 tsp. minced garlic
- 1 1/2 tsp. fresh ginger root
- 1/4 c. soy sauce
- 1/4 c. hoisin sauce
- 1/4 c. dry sherry
- 1/2 c. chicken stock
Directions

1Place a heavy wok or pan over high heat.

2Add oil.

3When hot, add the game hens, breast down.

4Reduce heat to medium.

5Cover and cook 6 minutes, turning at half time.

6Add remaining ingredients. Combine well.

7Cover and simmer over medium heat 40 minutes, turning at half time.

8Remove hens and halve them.
-
9Sauce should be thick and syrupy.
-
10If not, cook, uncovered, for few minutes to reduce.
