Holiday Broccoli Recipe

  • 1 1/2 to 2 lbs. broccoli
  • 1/2 teaspoon salt
  • 1 (10 1/2 ounce.) can cream of chicken soup
  • 1/2 c. mayonnaise
  • 1/4 teaspoon curry
  • Juice of 1 lemon
  • 2 tbsp. melted butter
  • 1/2 c. bread or possibly cracker crumbs

    Wash and split broccoli stalks.

    Place in boiling water.

    Cook stems 5 min before adding flowers.

    Cook till tender; drain.

    Blend together soup, mayonnaise, and curry pwdr.

    In a 1 1/2 qt casserole, place broccoli; squeeze lemon juice over top.

    Cover with soup mix.

    Top with crumbs and dribble with melted butter.

    Bake 20 min at 350 degrees till bubbly.
