- 1 pkg. white cake mix
- 4 eggs
- 1/2 c. water
- 2 tsp. salt
- 2 tsp. lemon or brandy extract
- 1/2 c. oil
- 1/2 c. sifted all-purpose flour
- 1 lb. pecan halves
- 1 1/2 lb. mixed fruit
- 8 oz. chopped dates
- 1 lb. light raisins
Directions

1Combine cake mix, 1 egg, water, salt and lemon or brandy extract.

2Beat until smooth.

3Add remaining eggs, one at a time, beating well after each one.

4Sift flour over fruits and nuts.

5Mix well and stir into batter.

6Spray 2 loaf pans with vegetable cooking spray.

7Fill with batter; press down.

8Bake in very slow oven (275°) for 2 1/2 or 3 hours or until done.

9(Place shallow pan of hot water on bottom of oven during baking.)

10Cool; remove cake from pans.

11Makes 4 1/2 pounds fruitcake.
