Holiday Fruit Cake

  • 1 pkg. white cake mix
  • 4 eggs
  • 1/2 c. water
  • 2 tsp. salt
  • 2 tsp. lemon or brandy extract
  • 1/2 c. oil
  • 1/2 c. sifted all-purpose flour
  • 1 lb. pecan halves
  • 1 1/2 lb. mixed fruit
  • 8 oz. chopped dates
  • 1 lb. light raisins

Directions

    Combine cake mix, 1 egg, water, salt and lemon or brandy extract.

    Beat until smooth.

    Add remaining eggs, one at a time, beating well after each one.

    Sift flour over fruits and nuts.

    Mix well and stir into batter.

    Spray 2 loaf pans with vegetable cooking spray.

    Fill with batter; press down.

    Bake in very slow oven (275°) for 2 1/2 or 3 hours or until done.

    (Place shallow pan of hot water on bottom of oven during baking.)

    Cool; remove cake from pans.
