Ingredients

  • 2 eggs
  • 3/4 c. sugar
  • 1/3 c. flour
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1 Tbsp. butter
  • 1 tsp. vanilla extract
  • 1 tsp. grated lemon rind
  • 2 2/3 c. flaked coconut
  • 24 candied cherry halves

Directions

    Beat eggs in bowl until light; add sugar gradually, beating for 5 minutes or until thickened.

    Add sifted dry ingredients; mix well.

    Stir in butter, vanilla, lemon rind and coconut. Drop by teaspoonfuls onto greased and floured cookie sheet. Decorate with candied cherries.

    Bake at 325° for 15 minutes. Cool completely.

    Store in tightly covered container.
