Holiday Mashed Potatoes

Ingredients
- 3 lb. potatoes
- 8 oz. cream cheese (room temperature)
- 1/4 c. butter
- 1/2 c. sour cream
- 1/2 c. milk
- 2 eggs, slightly beaten
- 1 tsp. salt
- dash of pepper
Directions

1Peel and cook potatoes.

2While hot, mash potatoes in a large bowl until all lumps are gone.

3Chop the cream cheese into small pieces and add to potatoes along with butter.

4Beat well until butter and cheese are melted and completely mixed.

5Add sour cream. Combine milk and eggs.

6Add to potatoes with salt and pepper.

7Beat well until fluffy.

8Put in greased 9-inch round casserole and refrigerate several hours or overnight.

9Bake 45 minutes at 350° until lightly browned.

10Serves 8 to 12.
