Holiday Mint Pie

  • 1 c. crushed Keebler grasshopper fudge mint cookies (20 cookies)
  • 1 Keebler Ready-Crust graham cracker pie crust
  • 3 Tbsp. hot water
  • 1/3 c. sugar
  • 2 Tbsp. milk
  • 8 oz. Cool Whip topping, thawed
  • 1/4 tsp. peppermint extract
  • 1 (3 oz.) pkg. Philadelphia cream cheese, softened
  • 6 to 10 drops green food coloring

Directions

    Mix cookies and hot water.

    Press on bottom of pie crust. Beat cheese until smooth.

    Add sugar, milk and peppermint extract. Beat until smooth.

    Mix cheese mixture with Cool Whip. Divide Cool Whip in half.

    Stir food coloring in 1/2 of the Cool Whip until evenly colored. Fill pie crust with alternate spoonfuls of white and green Cool Whip.

    Smooth top of pie with spatula. Chill 3 hours.
