- 3 lb. potatoes
- 2 large onions, thinly sliced
- 1/2 tsp. salt
- 1/4 c. butter or margarine
- 3 Tbsp. all-purpose flour
- 2 c. milk
- 1/2 c. grated Cheddar cheese
- 3/4 tsp. salt
- 1/4 tsp. white pepper
- 1/2 c. chopped fresh parsley
- 1 (2 oz.) jar diced pimentos, drained
Directions

1Peel and cut enough potatoes into 1/4-inch slices to measure 8 cups.

2Combine potato slices, onions and 1/2 teaspoon salt in a large Dutch oven.

3Add water to cover.

4Bring to a boil.

5Cover. Reduce heat and cook 5 minutes.

6Drain and set aside.
