- 3 lb. Irish potatoes, peeled, stewed and hot
- 1 (8 oz.) cream cheese (room temperature)
- 1/4 c. margarine
- 1/2 c. sour cream
- 1/2 c. milk (plus)
- 2 eggs, slightly beaten
- 1/4 c. finely chopped onion
- 1 tsp. salt
- 1 tsp. pepper
Directions

1In a large mixing bowl, mash potatoes as usual.

2When lumps are removed, add cream cheese and butter.

3Beat until well blended.

4Add sour cream.

5Pour beaten eggs into milk; add to mixture.

6Beat until light and fluffy.

7Add salt, pepper and onion.

8Be sure mixture is thin.
