Ingredients

  • 8 medium potatoes, cooked and sliced
  • 1 lb. fresh mushrooms, wiped clean and sliced
  • 2 large onions, thinly sliced
  • 4 Tbsp. butter
  • 1 tsp. each: salt, pepper and thyme
  • 1 pt. sour cream
  • 1 pt. small curd cottage cheese
  • 2 c. grated Cheddar cheese

Directions

    Saute mushrooms and onions separately in butter.

    Next, combine cottage cheese and sour cream.

    Then layer ingredients in 2 good-sized casserole dishes in this order:

    potatoes, onions, mushrooms and cottage cheese mixture.

    Sprinkle each layer lightly with seasonings and grated cheese.

    Keep layering until all ingredients are used up, ending with grated cheese on top.

    Cover and bake for 45 minutes at 350°; remove cover for last 15 minutes of baking.

    If you don't want to bake both casseroles at once, deliver one to a friend.

    It will keep nicely in the refrigerator for a day or two before baking.
