- 5 whole Large Baking Potatoes, Cubed
- 1 whole Meduim Onion, Diced
- 1 Tablespoon Salt, Or To Taste
- 1 teaspoon Black Pepper, Or To Taste
- 1/2 teaspoons Paprika, Or To Taste

1Heat a deep fat fryer or 2 inches of oil (vegetable, canola, peanut, your preference) to 325 degrees. Add cubed potatoes to the hot oil and cook them for 3 minutes. Drain the potatoes in a single layer on a sheet tray lined with paper towels for a half hour. Raise the heat of the oil to 375 degrees. Add the partially cooked potatoes and the diced onion to the hot oil. Cook for 5 minutes or until the potatoes are a nice golden brown. Drain the potatoes and toss them with the salt, pepper and paprika. Serve hot.
