Ingredients
- 3 c. flour
- 1/2 tsp. salt
- 1 c. soft oleo
- 1 c. low-fat cottage cheese (small curd)
- 1/2 tsp. red pepper (optional)
Directions

1In a large bowl, mix flour and salt.

2Using pie blender, cut in oleo and cottage cheese until mixture forms a dough.

3Divide into 4 parts and cover with wax paper.

4Refrigerate at least 1 hour.

5Take 1/4 of the dough and roll it out on floured board to 1/8-inch thick.

6Using a pizza cutter, cut dough into 2-inch squares and place on a greased baking sheet and pierce each cracker with a fork.

7Bake at 450° for 10 to 15 minutes.

8Be careful not to let them burn.
