  • 8 eggs
  • 1c. sugar
  • 3c. milk
  • 3c. whipping cream, div.
  • 1 tsp. nutmeg

    In a lg. saucepan, whisk eggs and sugar, Gradually add 1 c. milk and 1 c. cream. cook and stir over low heat until a thermometer reads 160. about 25 min. Pour into a lg bowl, stir in nutmeg and remaining milk and cream . place bowl in an ice water bath stir frequently until mixture is cool. cover and refig. for at least 3 hours before serving, 2 qts.
