  • 1 hog head
  • 2 pork hearts
  • 1 pork tongue
  • 1 beef tongue
  • 1 beef heart
  • 3 lb. quick oats
  • pastry for 1 (9-inch) double-crust pie
  • 1 medium potato, cooked and mashed
  • 1 lb. ground pork
  • 1/2 c. potato water
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 1/2 to 1 tsp. sage
  • 1/4 tsp. dry mustard
  • 1/8 tsp. cloves

Directions

    Combine pork, potato water, onion, garlic and seasonings in a large saucepan.

    Bring to boiling point, then reduce heat and allow to simmer for 25 minutes or until surplus liquid is reduced. Stir occasionally.

    Remove from heat and stir in mashed potato. Chill mixture.
