  • 1 cup warm water (110 to 115F)
  • 1 package active dry yeast (2 1/2 teaspoons)
  • 2 1/2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 3/4 teaspoon salt
  • 2 tablespoons olive oil, plus more for the bowl

    In a large bowl, dissolve the sugar in the warm water.

    Sprinkle the yeast over the water and let stand until foamy, about 5 minutes.

    Stir in 2 1/4 cups of the flour, the cornmeal, salt, and 2 tablespoons of the oil, stirring until the mixture forms a dough.

    Put the dough on a floured surface and knead, incorporating as much of the remaining 1/4 cup flour as necessary to prevent the dough from sticking, until smooth and elastic, about 5 minutes.

    Put the dough in a deep, oiled bowl and turn to coat with the oil.

    Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour or until doubled in bulk.
