Ingredients

  • 3 medium tomatoes, peeled and finely chopped
  • 1 (4 oz.) can diced green chili peppers, drained
  • 1/4 c. sliced green onion
  • 1/4 c. chopped green pepper
  • 2 Tbsp. lemon juice
  • 1 to 2 Tbsp. snipped parsley
  • 1 clove garlic, minced
  • 1/4 tsp. pepper
  • 1/2 c. tomato sauce

Directions

    In a medium mixing bowl, stir together tomatoes, chili peppers, green onion, green pepper, lemon juice, parsley, garlic and pepper.

    Place about 1 cup of the tomato mixture and tomato sauce in a blender container or food processor bowl.

    Cover and blend or process just until pureed.

    Stir into remaining tomato mixture.

    Cover and chill for several hours or overnight, stirring occasionally.
