  • 1 lb. small red potatoes
  • 4 eggs (or substitute)
  • 4 egg whites
  • 1/2 tsp. dried oregano leaves, crushed
  • 1/2 tsp. salt
  • 1/8 tsp. ground pepper
  • 1/2 c. thinly sliced roasted red peppers
  • 2 Tbsp. grated Romano or Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • vegetable cooking spray
  • 4 slices reduced-fat American cheese, each cut diagonally in half
