- 5 oz. lye
- 6 qt. cold water
- 5 qt. corn (dry field corn)
Directions

1Dissolve lye in the 6 quarts of water, then add the corn and let stand for 15 hours.

2Drain lye water from corn.

3Add more cold water and wash thoroughly several times to remove corn hulls and lye.

4Rubbing in a soft bag helps to remove hulls.

5All hulls and black tips should be off.

6If corn is discolored soak overnight in clear water and small amount of salt.

7Drain.
-
8Add fresh water and 5 tablespoons salt.

9Boil 3 to 4 hours in a large covered kettle. Change water once or twice while cooking.

10Be sure to keep kettle covered.

11Makes 15 to 20 quarts of hominy.
