Hominy With Chipotle

Ingredients
- 2 Tbsp. olive oil
- 1 large onion, minced
- 3 to 4 cloves garlic, minced
- 1 c. chopped tomatoes
- 1 to 2 chipotle peppers in sauce, chopped (canned, available in Mexican food section) or 1 tsp. tomato paste
- 29 oz. can hominy, rinsed and drained
- salt and pepper to taste
- 1 to 2 c. grated Jack cheese
Directions

1Preheat oven to 375°.

2Saute onion in olive oil 1 minute.

3Add garlic; cook 2 more minutes.

4Stir in tomatoes, chipotle peppers and a little of the sauce.

5These are hot; if you can't stand the heat, use 1 teaspoon tomato paste instead.

6Cook 5 minutes.

7Stir in hominy, salt and pepper.

8Remove from heat.

9Stir in cheese, reserving 1/2 cup for the top.

10Place casserole in the oven and reduce heat to 350°.

11Bake for 45 minutes.

12Let stand for 5 minutes before serving.
