  • 1 pinch Salt
  • 1 sprig Thyme Leaves (optional)
  • 1 whole Egg Yolk
  • 1 teaspoon Water

Directions

  1. 1
    Homity Pie
  2. 2
Make up a batch of rich pastry: See below, or use whatever pastry you fancy.
  3. 3
Ready made Filo works well and this is what is shown in the photo.
  4. 4
Alternatively forget the pastry and sprinkle with breadcrumbs and parmesan.
  5. 5
    Voila...Homity Crumble!
  6. 6
Peel, cube (dice size) and slowly fry 1 pound of potatoes in olive oil until soft and browned.
  7. 7
New potatoes stick a bit but are still nice.
  8. 8
Peel, finely slice and fry 1 pound of onions until soft and browned.
  9. 9
Add 2 sliced garlic cloves to the onions near to the end of their cooking time.
  10. 10
Fry up a pack of Cubetti di Pancetta (pancetta) easy to find in shops with deli meat.
  11. 11
All of the above can be done in advance like I show on the blog page.
  12. 12
To the veggie/pancetta mixture, add a small bunch of fresh chopped herbs: marjoram, thyme, that sort of thing.
  13. 13
Add plenty of salt and pepper, 2 really big pinches of each.
  14. 14
Stir in a small carton of double cream (100-150 ml).
  15. 15
    Take off the heat.
  16. 16
Stir in 2 ounces of grated cheese.
  17. 17
Pour the filling mix into your baked pastry in the pie dish (or just a plain oven proof pie dish if you dont want the pastry).
  18. 18
Add another 2 ounces of cheese on top.
  19. 19
Cook in a hottish oven (180-190 C) for 25-30 minutes until golden.
  20. 20
Allow to cool for half an hour before you eat.
  21. 21
    Its great for picnics too.
  22. 22
    Rich Pastry
  23. 23
Put 180 g of flour in a bowl (I use a mix of 1/2 plain flour and 1/2 wholemeal).
  24. 24
    Mix in 100 g butter.
  25. 25
Add 50 g grated parmesan and a pinch of salt.
  26. 26
Add some stripped thyme leaves if you have them.
  27. 27
Then add 1 egg yolk mixed with 1 teaspoon of water gradually to bring it into a ball.
  28. 28
Wrap in cling film and refrigerate for 20 minutes then roll out into a pie shape.
  29. 29
Butter a pie dish and line it with rolled out pastry with a good overhang as it will shrink a lot.
  30. 30
Prong it with a fork and bake it for 10-15 mins on 200 degrees C. I find that I dont need to do the baking beans thing if I use wholemeal flour or a mix of the two.
