Ingredients

  • 3 1/2 c. flour
  • dash of salt
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • 1/2 tsp. ginger
  • 4 eggs
  • 3/4 c. sugar
  • 1/4 c. vegetable oil
  • 2 c. honey
  • 1/2 c. brewed coffee
  • 1 1/2 c. chopped nuts

    In a medium bowl, combine flour and all dry ingredients.

    In a large bowl, beat eggs.

    Gradually add sugar.

    Beat until thick and light in color.

    Beat in oil, honey and coffee.

    Stir in flour mixture and nuts.

    Oil two 9-inch loaf pans and line with foil. Pour mixture into pans and bake at 325° for 50 minutes until browned and a toothpick inserted in center comes out clean.

    Cool on a rack before removing from pans.
