Ingredients

  • 3 c. sifted flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. granulated sugar
  • 1 c. boiling coffee
  • 2 Tbsp. chopped nuts (if desired)
  • 1 tsp. baking soda
  • 1 tsp. ginger
  • 1 tsp. nutmeg
  • 3 eggs
  • 1 c. honey
  • 2 Tbsp. oil or melted shortening

    Sift flour.

    Measure and sift with baking powder, baking soda, spices and salt.

    Beat eggs until thick and light, about 5 minutes.

    Add sugar gradually, beating well. Add honey, coffee and shortening.

    Blend well.

    Add dry ingredients.

    Beat until well blended.

    Sprinkle nuts on bottom of greased and waxed paper lined 9 x 13-inch pan.

    Bake in moderate oven (375°) for 35 to 40 minutes or until done.
