  • 1 14 cups honey
  • 1 cup oil
  • 2 teaspoons instant coffee
  • 12 cup plus 2 tbsp. boiling water (dissolve coffee in this)
  • 1 14 cups dark brown sugar
  • 4 eggs
  • 4 cups self rising flour
  • 1 teaspoon heaping cinnamon
  • 1 teaspoon heaping mixed spice
  • 1 teaspoon ginger
  • 1 teaspoon baking soda
  • 1 (8 ounce) package cream cheese
  • 12 cup butter
  • 34 cup chopped pecans
  • 1 teaspoon vanilla
  • 1 lb confectioners' sugar

Directions

    Beat together the honey, oil , coffee and sugar.

    Beat in the eggs and then the rest of the ingredients sifted together.

    Bake in greased shallow pan 12x10x2 at 325F for 1 hour.

    Cake is done when toothpick inserted in center comes out clean.

    PECAN ICING:.

    Soften the cream cheese and butter.

    Mix well with remaining ingredients.

    Spread on cake.
