  • 3/4 c. sifted flour
  • 1/2 tsp. salt
  • 1/4 c. prepared diced apple
  • 1/3 c. milk
  • 3 Tbsp. melted shortening
  • 1 1/4 tsp. baking soda
  • 1/3 c. cornmeal
  • 1 egg, well beaten
  • 1/4 c. honey

    Sift flour once, measure, add baking powder and salt.

    Sift again; add cornmeal.

    Wash, pare and dice apples.

    Combine egg, milk, honey and shortening.

    Add all at once to flour-cornmeal mixture, stirring only enough to dampen all flour.

    Fold in apple. Bake in well greased 2-inch muffin pans at 400° for 20 minutes or until done.
