- 3/4 c. sifted flour
- 1/2 tsp. salt
- 1/4 c. prepared diced apple
- 1/3 c. milk
- 3 Tbsp. melted shortening
- 1 1/4 tsp. baking soda
- 1/3 c. cornmeal
- 1 egg, well beaten
- 1/4 c. honey
Directions

1Sift flour once, measure, add baking powder and salt.

2Sift again; add cornmeal.

3Wash, pare and dice apples.

4Combine egg, milk, honey and shortening.

5Add all at once to flour-cornmeal mixture, stirring only enough to dampen all flour.

6Fold in apple. Bake in well greased 2-inch muffin pans at 400° for 20 minutes or until done.
