- 1 c. shortening (part butter)
- 1 c. brown sugar, packed
- 2 eggs
- 1/4 c. plus 2 Tbsp. honey
- 1 tsp. vanilla
- 3 1/2 c. sifted flour
- 2 tsp. soda
- apricot or other jam
Directions

1Mix thoroughly shortening, brown sugar and eggs.

2Stir in honey and vanilla.

3Sift together and stir in flour and soda. Chill until firm (several hours or overnight).

4Heat oven to 350°. Form dough into balls and place on ungreased baking sheet.

5Bake 10 to 12 minutes, until golden brown and top springs back when lightly touched.

6Cool slightly.

7Put together in pairs with apricot jam between.

8Makes 3 dozen double cookies.
