- 3 lb. carrots, peeled and cut into sticks
- 2 bunches scallions, tops and roots trimmed
- 6 Tbsp. melted butter
- 3/4 tsp. salt
- 3 Tbsp. honey
- juice and grated rind of 1 lemon
Directions

1Preheat oven to 350°.

2Immerse carrots and scallions in boiling, salted water and cook until tender-crisp.

3Place in cold water to stop cooking and drain.

4Combine remaining ingredients. Vary the proportions according to sweetness of carrots.

5Place carrots and scallions in baking dish.

6Pour sauce over them and bake for 15 minutes.
