- 3 cups frozen sliced plantains
- 1/3 cup unsalted pumpkinseed kernels
- 2 tablespoons honey, lightly heated
- 1/4 teaspoon salt
- Cooking spray
- 2 tablespoons fresh lime juice

1Preheat oven to 375°.

2Place plantains in a large saucepan; add water to just cover. Bring to a boil. Cook 5 minutes or until tender; drain and transfer to large bowl. Stir in pumpkinseed kernels, honey, and salt.

3Spread mixture on baking pan lined with foil and coated with cooking spray. Bake at 375° for 15 minutes, turning once. Drizzle with juice.
