- 1 c. dried black-eyed peas
- 1 qt. water
- 2 Tbsp. olive oil, divided
- 1 c. coarsely chopped lean, cooked ham
- 1/2 tsp. salt
- 1/4 to 1/2 tsp. crushed red pepper
- 2 cloves garlic, minced
- 1 c. chopped onion
- 1 c. long-grain rice, uncooked
Directions

1Sort and wash peas.

2Place in a 6-quart pressure cooker.

3Add water, 1 tablespoon oil and next four ingredients.

4Stir well. Close lid securely to bring to high pressure over high heat, about 7 minutes.

5Adjust heat to medium or level needed to maintain high pressure.

6Cook 10 minutes.

7Remove from heat and cool under cold running water.

8Remove lid.
-
9Drain mixture, reserving 2 cups cooking liquid.

10Set aside.
