- 1/2 c. raw rice
- 1 (16 oz.) can black-eyed peas
- 2 scallions
- 1/4 lb. bacon
Directions

1Cook rice.

2Drain and rinse peas.

3Slice scallions.

4In large frying pan, cook bacon until crisp.

5Drain and crumble bacon. Pour off all but 2 tablespoons fat.

6Put the rice, peas, scallions, salt and pepper into pan and heat through, 3 to 5 minutes.

7Stir in bacon and serve.
