  • 2 cans black-eyed peas, heated
  • 1 c. chopped ham
  • 1 c. chopped onion
  • 1/2 tsp. pepper sauce
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 3 c. cooked rice

Directions

    Saute ham chunks, onion and pepper sauce in oil 3 to 5 minutes. Combine peas and ham mixture. Add rice. Place in 2-quart baking dish; bake at 325° until heated.
