- 2 c. dried black-eyed peas
- 1/2 lb. salt pork, quartered
- 2 c. chopped onions
- 1 c. chopped green pepper
- 2 1/2 c. water
- 1 c. uncooked long grain rice
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. red pepper
Directions

1Wash peas; place in a Dutch oven.

2Cover with water 2 inches above peas.

3Let soak 8 hours.

4Drain.

5Return peas to saucepan. Add salt pork, onions and green pepper.

6Cover with water and simmer, covered, 2 hours or until peas are tender and water has cooked very low.

7Add 2 1/2 cups of water, rice and seasonings to peas.

8Cover and cook over low heat 20 minutes or until rice is done.

9Add additional water if necessary.

10Yields 8 to 10 servings.
