- 4 strips bacon
- 1/2 c. raw rice
- 1/4 c. onion
- 2 c. water
- 2 c. fresh black-eyed peas
- salt and pepper to taste
Directions

1Dice bacon.

2Add onion and fry until bacon is crisp.

3Add peas and rice, then water.

4Cover and simmer over low heat for about 20 minutes or until rice is tender.

5(I always add a good sized shake or two of Louisiana hot sauce, not Tabasco sauce; there is a difference.)

6Yields 10 servings.
