Ingredients
- 1 (3 1/2 oz.) can Angel Flake coconut
- 1 lb. candied mixed fruit
- 2 1/2 c. chopped pecans
- 1 can sweetened condensed milk
- 4 oz. red or green candied cherries (for decorating tops)
Directions

1Mix all ingredients.

2Spray miniature muffin pans with Pam. Fill pans 2/3 full and top with 1/2 of a red or green cherry, pressed down slightly.

3Bake in preheated 300° oven for 30 to 35 minutes until lightly browned.

4A pan of water placed on lower rack under cakes during baking will help prevent dryness.

5When cool, store in layers of waxed paper in airtight tins.

6Makes 48 miniature cakes.
