- 3 c. water
- 1 c. tomato juice (no salt if available)
- 3/4 c. chopped onion
- 1 c. shredded carrots
- 1 c. shredded potatoes
- 2 c. shredded cabbage
- 1 1/2 Tbsp. honey
- 1 1/2 Tbsp. lemon juice
- plain nonfat yogurt (for garnish)
Directions

1In soup pot, combine water and tomato juice and bring to boil. Add vegetables; cover and simmer 30 minutes until tender.

2Remove 2 cups soup from pot and puree in blender of food processor. Return pureed soup to pot and stir in honey and lemon juice. Cover and simmer 5 minutes.

3Serve with yogurt for garnish.
