Hot Cabbage Salad

  • 3 slices bacon
  • 1/4 c. chopped onion
  • 2 Tbsp. vinegar
  • 2 Tbsp. water
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 small head cabbage, shredded (about 4 1/2 c.)
  • 1 apple, pared, cored and finely chopped

    In skillet, cook bacon until crisp.

    Drain, reserving drippings; set bacon aside.

    Add onion to drippings and cook until tender.

    Stir in vinegar, water, sugar, salt and pepper; bring to boiling.

    Add cabbage and apple; toss to coat.

    Cover and cook over medium heat for 5 minutes or until cabbage is just wilted. Crumble bacon over top.
