- 2 medium apples or peaches or 2 small pears, peeled and cored or pitted
- 2 Tbsp. water
- 2 medium eggs, separated
- dash of lemon juice
Directions

1In a small saucepan, combine fruit with water; cover and cook until fruit is very soft.

2Put fruit and liquid in blender container and process; transfer to small bowl.

3Beat yolks lightly and add to fruit in bowl with lemon juice.

4Beat whites until stiff and fold them into the first mixture.

5Transfer to 2 individual souffle dishes and bake at 350° until tops are brown, about 20 minutes.

6Serve at once.
