- 1/4 c. lemon juice
- 1 Tbsp. melted butter or margarine
- 2 Tbsp. each: olive oil, parsley and sesame seed
- 1 Tbsp. Tabasco pepper sauce
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 4 brook trout
Directions

1In a shallow dish, mix lemon juice, butter, olive oil, parsley, sesame seed, Tabasco pepper sauce, ground ginger and salt.

2With a fork, pierce skin of brook trout (about 1 pound each).

3Coat fish with marinade inside and out.

4Cover and refrigerate for 30 minutes to an hour.

5Place fish in hand held grill; brush with marinade.

6Cook about 4-inches from hot coals for 5 minutes.

7Turn and brush with marinade.

8Cook 5 minutes longer or until fish flakes easily with fork.

9Makes 4 servings.
