  • 1 Tbsp. cooking oil
  • 1 lb. boneless pork, cut into bite size pieces
  • 1/2 c. chopped celery
  • 1/4 c. chopped sweet red/green pepper
  • 1/4 c. chopped onion
  • 1 (10 oz.) pkg. medium egg noodles, cooked and drained
  • 1 (10 3/4 oz.) can cream of mushroom soup (undiluted)
  • 1 (10 3/4 oz.) can cream of chicken soup (undiluted)
  • 1 (16 1/2 oz.) can cream-style corn
  • 1/2 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. saltine crumbs
  • 3 Tbsp. butter, melted

Directions

    In a skillet, heat oil; cook pork, celery, red/green pepper and onion until the meat is browned and vegetables are tender.

    In a large bowl, combine pork mixture, noodles, soups, corn, milk, salt and pepper.

    Mix well.

    Turn into an ungreased 13 x 9 x 2-inch baking dish.

    Combine crumbs and butter; sprinkle on top. Bake, uncovered, at 350° for 45 minutes or until heated through. Yields 8 to 10 servings.
