  • 2 (10 oz.) boxes frozen chopped spinach, thawed, cooked and drained, reserving juice
  • 1 stick butter
  • 4 Tbsp. chopped onion
  • 4 Tbsp. flour
  • 1 small can evaporated milk (undiluted)
  • 1/2 c. spinach juice
  • 6 oz. jalapeno Jack cheese, grated
  • 2 Tbsp. Worcestershire sauce
  • salt to taste

    Melt butter in large skillet.

    Saute onion until soft.

    Add flour, milk and spinach juice.

    Continue to cook until thick.

    Add cheese and spinach.

    Add Worcestershire sauce and salt.

    Serve hot in chafing dish with toast points or corn chips.
