Hot Spinach Salad

Ingredients

  • 1 (10 ounce) bag Baby Spinach (approximate size)
  • 12 cup green onion, sliced
  • 1 (8 ounce) can water chestnuts, sliced and drained
  • 2 ounces monterey jack cheese, shredded (I have used a mild white cheese before-like Brick)
  • 3 tablespoons brown sugar
  • 13 cup chicken broth
  • 3 tablespoons balsamic vinegar
  • 2 drops hot sauce
  • 1 (8 ounce) can mandarin oranges, drained (approximate size)

    SALAD:.

    Toss spinach, onions, water chestnuts and cheese together in a large bowl.

    DRESSING:.

    Combine brown sugar, chicken broth, vinegar and hot suace in a pan.

    Bring to a boil.

    Remove from heat and stir in oranges.

    Pour over spinach mixture and toss before serving.
