- 3 medium yellow squash, sliced
- 3 medium zucchini squash, sliced
- 1 medium onion, diced
- 1 large tomato, diced
- 2 to 3 jalapeno peppers (fresh), chopped
- 1/2 c. mild or sharp grated cheese
- 2 Tbsp. oil
- 1 c. water
Directions

1Saute onion and pepper in large heavy skillet; add diced onion and diced tomatoes.

2Add sliced squash and water.

3Cook slowly in open skillet until liquid has cooked down.

4Sprinkle cheese on top; cover and let stand for a few minutes before serving.
