Hot Squash Casserole

  • 2 (10 oz.) pkg. frozen yellow squash or 3 sliced fresh squash
  • 1/2 medium green pepper, sliced
  • 1 medium onion, chopped
  • 1 (4 oz.) jar processed cheese spread
  • 1/2 (10 oz.) can Ro-Tel brand tomatoes
  • tortilla chips

Directions

    Cook squash, pepper and onion until tender; drain and mash. Add cheese and tomatoes.

    Place in a buttered 2-quart casserole dish.

    Sprinkle broken tortilla chips on top.

    Bake at 350° for about 25 minutes, or until bubbly.
