"Hot" Zucchini Squash

- 5 to 6 medium zucchini, sliced in round
- 1 c. Monterey Jack jalapeno cheese, grated
- 1/2 c. bread crumbs
- 1 (14 1/2 oz.) can stewed tomatoes, chopped
Directions

1Boil zucchini for 8 minutes until crisp-tender.

2Place 1/2 of zucchini in greased casserole and sprinkle with cheese and crumbs. Top with remainder of zucchini.

3Cover with tomatoes.

4Bake 30 minutes at 350°.
