Hummingbird Cake

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 3 beaten eggs
  • 1 1/2 c. salad oil
  • 1 1/2 tsp. vanilla
  • 1 (8 oz. size) can crushed pineapple, undrained
  • 2 c. chopped nuts (1 c. for batter and 1 c. for icing)
  • 2 c. chopped bananas

    Combine dry ingredients

    in a large mixing bowl. Add eggs and salad oil.

    Stir until dry ingredients are moist.

    Do not beat. Stir in pineapple, vanilla, nuts and bananas.

    Spoon batter into three 9-inch cake pans. Bake 30 minutes at 350° or until cake tests done. Cool in pans for 10 minutes. Remove and cool thoroughly. Spread frosting between layers and on top of cake.
