  • 3 c. all-purpose flour
  • 3 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 3 eggs, beaten
  • 1 c. vegetable oil
  • 1 1/2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 c. pecans, chopped
  • 2 c. bananas, chopped

    Combine first 5 ingredients in a large bowl. Add eggs and oil. Stir until dry ingredients are moist. Do not beat. Add vanilla, pineapple, pecans and bananas. Mix in thoroughly with spoon. Divide batter into 3 (9-inch) cake pans. Bake at 350° for 25 to 30 minutes. Cover cake between layers and all over with following frosting.
