  • 3 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 eggs, beaten
  • 1 1/2 c. vegetable oil
  • 1 1/2 tsp. vanilla
  • 8 oz. can crushed pineapple (undrained)
  • 2 c. chopped pecans
  • 1 1/2 c. chopped bananas

    Preheat oven to 350°. Place all dry ingredients in a large mixing bowl. Add eggs and oil and stir until dry ingredients are moist. Do not beat. Stir in vanilla, pineapple, bananas and pecans. Spoon batter into a greased and floured cake pan. Bake at 350° for 25 to 30 minutes and let cool. Makes a 10 x 13 oblong pan or 3 round cake pans.
