- 2 tablespoons sesame seeds
- 2 garlic cloves, chopped
- 12 teaspoon salt
- 14 teaspoon pepper
- 12 cup vegetable oil
- 1 (19 ounce) can chickpeas, drained and rinsed
- 14 cup lemon juice
- 2 tablespoons parsley, chopped
Directions

1In small skillet, gently shake sesame seeds over low heat until golden brown (5 minutes).

2In food processor or blender (see note), puree seeds, garlic, salt, pepper and 1/4 cup of the oil until smooth.

3Add chickpeas, lemon juice and remaining 1/4 cup of oil.

4Process until smooth.

5Stir in parsley.

6Note: if using blender, add small amounts of oil alternately with chickpeas.
