  • 100 g chickpeas, soaked overnight
  • 2 garlic cloves, peeled
  • 3 tablespoons tahini
  • 12 lemon (juice)
  • 12 teaspoon ground cumin
  • 1 tablespoon water (cold)
  • black pepper, freshly ground

Directions

    Cook the chick peas for 2-2 1/2 hours until quite soft or pressure cook at 15 lb pressure for 20 minutes.

    Drain and mash with the remaining ingredients.

    For a smoother texture place in a liquidizer, adding a little exra water if required.
